Air Fryer Shrimp Kebabs Recipe

Ingredients

SERVES 2.

  • 18 medium shelled and deveined shrimp
  • 1 medium zucchini, cut into 1 cubes
  • 1/2 medium red bell pepper, cut into 1-thick squares
  • 1/4 medium red onion, cut into 1-thick squares
  • 11/2 tablespoons coconut oil, melted
  • 2 teaspoons chili powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon ground black pepper

Method

  1. Soak four 6 bamboo skewers in water for 30 minutes
  2. Place a shrimp on the skewer, then a zucchini, a pepper, and an onion
  3. Repeat until all ingredients are utilized
  4. Brush each kebab with coconut oil
  5. Sprinkle with chili powder, paprika, and black pepper
  6. Place kebabs into the air fryer basket
  7. Adjust the temperature to 400°F and set the timer for 7 minutes or until shrimp is fully cooked and veggies are tender
  8. Flip kebabs halfway through the cooking time
  9. Serve warm
