Ingredients
SERVES 2.
- 18 medium shelled and deveined shrimp
- 1 medium zucchini, cut into 1 cubes
- 1/2 medium red bell pepper, cut into 1-thick squares
- 1/4 medium red onion, cut into 1-thick squares
- 11/2 tablespoons coconut oil, melted
- 2 teaspoons chili powder
- 1/2 teaspoon paprika
- 1/4 teaspoon ground black pepper
Method
- Soak four 6 bamboo skewers in water for 30 minutes
- Place a shrimp on the skewer, then a zucchini, a pepper, and an onion
- Repeat until all ingredients are utilized
- Brush each kebab with coconut oil
- Sprinkle with chili powder, paprika, and black pepper
- Place kebabs into the air fryer basket
- Adjust the temperature to 400°F and set the timer for 7 minutes or until shrimp is fully cooked and veggies are tender
- Flip kebabs halfway through the cooking time
- Serve warm
