Ingredients
SERVES 4.
- 1 pound 80/20 ground beef
- 1/4 medium white onion, peeled and chopped
- 1 cup shredded Cheddar cheese, divided
- 1 large egg
- 4 slices sugar-free bacon, cooked and crumbled
- 2 pickle spears, chopped
Method
- Brown the ground beef in a medium skillet over medium heat about 7-10 minutes
- When no pink remains, drain the fat
- Remove from heat and add ground beef to large mixing bowl
- Add onion, 1/2 cup Cheddar, and egg to bowl
- Mix ingredients well and add crumbled bacon
- Pour the mixture into a 4-cup round baking dish and top with remaining Cheddar
- Place into the air fryer basket
- Adjust the temperature to 375°F and set the timer for 20 minutes
- Casserole will be golden on top and firm in the middle when fully cooked
- Serve immediately with chopped pickles on top
