Ingredients
SERVES 4.
- 11/2 cups shredded cooked chicken
- 1/3 cup low-carb enchilada sauce, divided
- 1/2 pound medium-sliced deli chicken
- 1 cup shredded medium Cheddar cheese
- 1/2 cup shredded Monterey jack cheese
- 1/2 cup full-fat sour cream
- 1 medium avocado, peeled, pitted, and sliced
Method
- In a large bowl, mix shredded chicken and half of the enchilada sauce
- Lay slices of deli chicken on a work surface and spoon 2 tablespoons shredded chicken mixture onto each slice
- Sprinkle 2 tablespoons of Cheddar onto each roll
- Gently roll closed
- In a 4-cup round baking dish, place each roll, seam side down
- Pour remaining sauce over rolls and top with Monterey jack
- Place dish into the air fryer basket
- Adjust the temperature to 370°F and set the timer for 10 minutes
- Enchiladas will be golden on top and bubbling when cooked
- Serve warm with sour cream and sliced avocado
