Ingredients

  • 1 lemon -juice and grated rind
  • 1 cup white wine
  • 1/2 cup dry sherry
  • 2 cups heavy whipping cream, very cold
  • 2cups powdered confectioners sugar bowls, chilled

Method

  1. Blend the wine and sherry with the lemon juice
  2. Whip cream in the chilled bowl, adding lemon rind, and, slowly, the sugar
  3. If you use a hand mixer, there will be a cloud of dust, so don’t do this in your Sunday Best!
  4. Add the wine/sherry/lemon juice mixture gradually to the cream and sugar mixture, whipping as you go
  5. It may take as long as fifteen minutes to thicken
  6. Pour or spoon into wine glasses
  7. Cover with cling wrap and set for two to three days in the refrigerator
  8. It will slowly separate into a clear layer and a cream layer
  9. To be served at the end of your candlelit 18th Century dinner
