Chicken Crust Pizza

For the crust
- 11/4 pounds boneless, skinless chicken breasts, cut into large chunks
- 1/2 cup grated parmesan cheese
- 1 teaspoon dried oregano
- 1 teaspoon dried rosemary
- 1 teaspoon dried sage
- pinch of black pepper
For the topping
- 3 tablespoons reduced-calorie pizza sauce
- 1/4 cup grated parmesan cheese (optional)
- 1/4 cup chopped fresh basil
- 1/2 cup shredded reduced-fat mozzarella cheese
- 1/2 red bell pepper, seeded and chopped
- garnish: red pepper flakes, dried chives
Method
- Preheat the oven to 450°F
- Line a baking sheet with parchment paper
- To make the crust, add the chicken, parmesan, oregano, rosemary, sage, and black pepper to a food processor or high-powered blender
- Pulse until mixed and minced
- Put the pizza crust on the baking sheet and mash it down with a spatula to form a thin circle or large rectangle less than 1/4 inch thick
- Bake in the oven for 13 to 15 minutes, or until the edges have browned and the chicken has cooked through
- If at the end of baking there is liquid in the pan, I recommend removing the chicken crust from the original piece of parchment paper and replacing the wet paper with a dry one before adding the toppings
- Top the crust with the pizza sauce, parmesan (if using), basil, mozzarella, and bell pepper; feel free to add your own low-calorie ingredients
- Bake in the oven until the cheese has melted, browned, and bubbled, about 8 minutes
- Remove from the oven, allow to cool slightly, garnish, slice, and enjoy!
- Allowing the pizza to cool slightly will make it much easier to handle and hold like traditional pizza
