Low Fat Lemon Bars

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup firmly packed brown sugar
  • 1/4 cup granulated sugar
  • 1/2 reduced-fat margarine
  • 1 cup old-fashioned oats, or quick-cooking oats
  • nonstick cooking spray
  • 8 ounces fat-free cream cheese, softened
  • 1 egg
  • 1/4 cup lemon juice
  • 1 tablespoon grated lemon peel
  • Method

  • Preheat oven to 350°F
  • In medium bowl, blend flour and sugars; cut in margarine until mixture resembles coarse crumbs.
  • Stir in oats.
  • Reserve 1 cup crumb mixture, pressing remaining crumbs onto bottom of 9-inch-square baking pan sprayed with nonstick cooking spray.
  • Bake 20 minutes.
  • In small bowl, with electric mixer on medium speed, beat cream cheese, egg, lemon juice and peel until well blended.
  • Pour over baked crust; sprinkle with reserved crumb mixture.
  • Bake 25 minutes longer.
  • Cool.
  • Cut into bars.
  • Makes 16 servings.
  • Preparation time: About 15 minutes.
  • Cooking time: About 45 minutes.
