Crust:

  • 1 tablespoon Swerve
  • 1 cup almond flour
  • 1 stick butter, room temperature
  • 1/2 cup unsweetened coconut, shredded

Filling:

  • 1 teaspoon powdered gelatin
  • 2 tablespoons Swerve
  • 17 ounces mascarpone cream
  • 2 tablespoon orange juice

Method

  1. Thoroughly combine all the ingredients for the crust; press the crust mixture into a lightly greased baking dish.
  2. Let it stand in your refrigerator.
  3. Then, mix 1 cup of boiling water and gelatin until all dissolved.
  4. Pour in 1 cup of cold water.
  5. Add Swerve, mascarpone cheese, and orange juice; blend until smooth and uniform.
  6. Pour the filling onto the prepared crust.
