Ingredients

Any keto friendly leftover you can find e.g.:

  • 1/2 red bell pepper, cut into thin strips
  • 1/4 medium onion, thinly sliced
  • 3 tablespoons (45 ml) olive oil
  • 2 eggs, beaten
  • 1 ounce (30 g) sharp cheddar, shredded or sliced
  • 1/2 black avocado, sliced

Method

  1. In your skillet over medium-high heat, saute the pepper and onion in the oil until the onion is translucent and the pepper is going limp
  2. Remove from the pan and keep on hand
  3. If your pan isn’t nonstick, give it a shot of nonstick cooking spray before putting it back on the heat and increasing the heat a touch to high
  4. Make your omelet according to Keto Easy Omelet

Makes 1 serving grams of carbohydrates and 6 grams of fiber, for a total of 8 grams of usable carbs and 21 grams of protein
