Ginger and Applesauce Cake
Ingredients
Servings : 2-4 dishes.
- 2 cups whole wheat flour
- 1 cup sugar
- 2 oz candied ginger, chopped
- 2 tablespoons cornstarch
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 2 1/2 cups applesauce
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 pinch of salt
- 2 tablespoons maple syrup
Method
- In a bowl, mix together the applesauce, lemon juice and vanilla
- Stir in the sugar, flour, cornstarch, baking soda and powder, cinnamon and a pinch of salt
- Mix well then fold in the candied ginger
- Pour this batter into a round cake pan, lined with parchment paper
- Bake the cake in a preheated oven at 350F for 30-40 minutes
- To check if it’s done, insert a skewer into the center
- If it comes out clean, the cake is done, if not, bake it 10 more minutes
- Let it cool in the pan then powder it with sugar and serve cut into slices
