Fish Pie Slow Cooker

Ingredients

  • 1 pound (455 g) haddock, or other firm white fish
  • 280g frozen corn
  • 280g no-salt-added frozen peas
  • ½ cup (115 g) fat-free cream cheese
  • 2/3 cup (160 ml) skim milk
  • ¼ cup (30 g) bread crumbs
  • ½ cup (58 g) shredded Cheddar cheese

Method

  1. Cut fish into bite-size pieces
  2. Combine with corn and peas and place into slow cooker
  3. Stir cream cheese and milk until well blended and pour over fish mixture
  4. Cover and cook on high until fish is done, about 2 hours
  5. Preheat oven to 400°F (200°C, or gas mark 6)
  6. Combine bread crumbs and cheese and sprinkle over fish
  7. Remove liner from slow cooker and bake until cheese melts and topping begins to brown, about 10 minutes
  8. Yield: 4 servings
  9. Per serving: 263 g water; 394 calories (29% from fat, 37% from protein, 33% from carb)
